Easy Vegetarian, Chicken and Pork Fried Rice Recipes

When I was in 8th grade Social Studies, our teacher taught us how to make different ethnic recipes. One of our favorite recipes was Asian fried rice. Here are quick, easy fried rice recipes, including vegetarian, chicken and pork fried rice. First, let’s discuss some rice making tips. It isn’t necessary to buy Minute Rice, as regular rice cooks relatively quickly and it more tender. White rice has often been polished or bleached, so consider natural brown rice or organic rice. Our family prefers Basmati or Jasmine rice over regular rice. Jasmine rice has a fragrant, delicious flavor, similar to popcorn. Also, whatever type of rice you choose, don’t overcook it. Overcooked rice becomes sticky. I don’t use a rice cooker (steamer), but those that do use a rice steamer really love it.

Vegetarian Fried Rice:

2 cups cooked rice
vegetable broth to cook rice
three-four eggs, beaten
one half cup olive oil, sesame oil or peanut oil
two tablespoons Bragg’s Liquid Amino or soy sauce
several green onions chopped or one small onion or one half leek, finely chopped
two ribs celery, thinly sliced (or one teaspoon celery seed)
one tablespoon minced shallots or garlic or one clove garlic, chopped
thinly chopped nappa cabbage, celery cabbage, boy choy or green head cabbage
one pound frozen peas and carrots (or fresh diced carrots and shelled peas)
optional: substitute shelled edamame or wasabi peas (very spicy) for cooked peas
one teaspoon dried chopped chives

Steam rice and vegetables together is vegetable broth. Saute onion and celery in oil until tender. Pour rice and vegetables into sizzling oil. Add beaten eggs and stir fry until eggs are cooked. Toss with soy sauce or Bragg’s Liquid Amino. Season with coarse ground pepper. Serve topped with fresh alfalfa, clover, radish or onion sprouts.

Vegan Fried Rice: omit cooked eggs and add chopped miso or tofu to rice and vegetable mixture. Optional: add fresh zucchini, summer squash, baby corn, water chestnuts or bean sprouts to fried rice. This dish is perfect for people with cholesterol problems or egg albumen allergies.

Shrimp fried rice: Saute one pound deveined, shelled cooked shrimp with rice and egg mixture.

Chicken fried rice:

Cook rice and vegetables in chicken broth. Add one 12 ounce can cooked chicken or one finely chopped cooked chicken breast to rice and vegetable mixture.

Pork Fried Rice:

Cut grilled pork or ham into cubes. Substitute shaved or sliced pork or ham lunchmeat for cubed pork or ham, if desired.

Hot Pockets Bruschetta Chicken Panini

Here’s a good meal to consider buying next time you’re in the grocer’s frozen section and not sure what to buy for lunch – Hot Pockets Bruschetta Chicken Panini. The Hot Pockets Bruschetta Chicken Panini comes as a square about six inches in diameter that is scored for easy sharing with somebody else, too. One half of the whole panini is considered a serving, but I would probably have both halves in one meal if I really wanted to enjoy a full lunch.
Preparation

The Hot Pockets Bruschetta Chicken Panini can be cooked in either a microwave or conventional oven.

If you’re cooking your Hot Pockets panini in your microwave, be sure to use the crisping sleeve that comes packaged with your panini. Place the panini in your crisping sleeve, and then place the sleeve onto a paper plate. Heat in your microwave on High for 3 minutes and 15 seconds. After, you should let the Hot Pockets panini stand for about 2 minutes before enjoying it.

If you’re cooking your Hot Pockets panini in your conventional oven, preheat the oven to 350 degrees first. Once your oven is heated, place the panini on a cookie sheet, but DON’T use the crisping sleeve. Let your Hot Pockets panini bake for 30 minutes before eating.

Flavor

Overall, the Hot Pockets Bruschetta Chicken Panini is good. The flavor of the chicken, mozzarella cheese, tomatoes, and the focaccia bread is delicious. The taste of the filling in the panini reminded me a bit of a typical frozen pizza. However, the chicken and the olive oil focaccia bread offered quite a bit more overall flavor and pizazz than I would expect from a typical frozen pizza.

Remember that one serving of the Hot Pockets Bruschetta Chicken Panini is half of the whole panini. So when reading the nutrition facts below, keep in mind that you should double these numbers if you decide to eat the entire panini as it comes in the Hot Pockets box.
